Citrus Spinach Salad

2 cups fresh spinach leaves OR 2 cups torn Romaine Lettuce
1/2 small red onion, thinly sliced
2 fresh navel oranges, peeled and separated into sections
2 T toasted pine nuts
Dressing
2 T orange juice
2 T white wine vinegar
3 T olive oil (preferably extra virgin)
2 tsp. honey
1 T chopped fresh cilantro
2 tsp. dijon mustard
Salt & pepper to taste
Toss spinach, onion, oranges and pine nuts together. Whisk together all dressing
ingredients. Pour over salad and serve.
                                    Spinach Rice

1 tsp olive oil
1 ½ cups uncooked instant rice
1 bunch fresh spinach
2 tbsp grated Parmesan cheese
1 cup chopped onion
1 2/3 cup water
1/8 tsp salt
1/8 tsp ground nutmeg

Coat a saucepan with cooking spray. Add oil; place over high heat until hot. Add
onion; saute 1 minute. Add rice, water, & spinach; bring to a boil. Cover, reduce
heat; simmer until liquid is absorbed. Remove from heat; stir in cheese, salt, &
nutmeg. Serves 4.
                      Spinach Salad with Beets and Oranges

2 oranges
6 cups torn spinach
3 cups shredded peeled beets
1 tbsp olive oil
2 tbsp minced shallots
¼ cup raspberry vinegar
¼ tsp fresh ground pepper
¼ cup minced chives
¼ cup coarsely chopped walnuts

Peel oranges, and cut each crosswise into 5 slices. Place spinach on a large platter.
Spoon beets into spinach, and arrange orange slices on beets. Heat oil in a nonstick
skillet over medium-high heat. Add shallots, and saute 1 minute or until tender. Stir in
vinegar and pepper; Drizzle over salad.
Sprinkle salad with chives and walnuts. Serves 6.
                         Red Onion Spinach Salad

1 bunch spinach, washed
1 red onion
6 hard cooked eggs
1 lb cooked bacon
1 lb pear shaped tomatoes
1/2pkg feta cheese to taste crumbled
1 cup roasted walnuts or pecans
red raspberry dressing

Wash spinach very well. Slice onion into rings add to spinach in a glass bowl. Slice
egg into thin rings. Crumble bacon and feta cheese on top. Sprinkle tomatoes and
nuts. Chill for 30 minutes. Add dressing just before serving.
                                           Spinach Brownies

1 cup flour
1 teaspoon salt
1 teaspoon baking powder
1 cup milk
1 stick melted margarine
2 eggs, well beaten
1 cup minced onion
10-oz. shredded cheddar
10-oz. cooked and squeezed chopped spinach

Mix all ingredients. Place in a greased 9-inch square pan. Bake in 350º oven for 30
minutes. May be baked the day before and reheated. If batter is too loose, add flavored
breadcrumbs. Serves 8
