Banana Dessert Squares

1 1/4 cups graham cracker crumbs
1/4 cup sugar
1/4 cup melted butter

Topping:
1/4 cup butter
1 teaspoon finely grated lemon peel
1 tablespoon lemon juice
4 firm bananas -- cut in 1/2" slices
1/4 cup brown sugar, firmly packed
Nutmeg, to taste

Combine graham cracker crumbs, 1/4 cup granulated sugar, and 1/3 cup melted butter in a medium
bowl; mix well. Press crumb mixture into bottom of a buttered 8-inch square baking dish. Bake 5
minutes at 375°.
Melt 1/4 cup butter in a medium sauce pan over low heat.  Add lemon peel, lemon juice and
bananas. Stir just until bananas are coated with butter mixture. Arrange slices on crust. Sprinkle
with brown sugar and nutmeg. Bake at 375° for 12 to 15 minutes or until bubbly. Cut into squares
serve warm.
                     Banana Pecan Topping
1/4 cup butter
3 medium bananas peeled and sliced 1/4-inch thick
1/2 cup sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/2 cup pecan halves

Melt the butter in a large, heavy skillet pan. Cook the bananas in the hot
butter, stirring, for about 2 minutes, or until bananas begin to soften. Add
the sugar, cinnamon, and nutmeg. Cook until the sugar dissolves and begins
to caramelize, about 2 to 3 minutes; add the vanilla. Add pecan halves just
before serving. Serve warm or at room temperature, on ice cream,
gingerbread, bread pudding, or pound cake.
       Berry Banana Smoothie

1 small banana, peeled, cut up, and frozen
1/4 cup fresh or frozen assorted berries  
1 cup orange juice
3 tablespoons vanilla low-fat yogurt
Fresh mint (optional)
Fresh berries (optional)

In a blender container combine the frozen banana pieces,
desired fresh or frozen berries, orange juice, and yogurt.
Cover and blend until smooth. To serve, pour into
glasses. If desired, garnish with fresh mint and additional
berries. Makes 2 (8-ounce) servings.
                              Berry-Banana-Walnut Bread

1 ½ cups all-purpose flour
3/4 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp ground nutmeg
2 eggs -- beaten
1 cup sugar
3/4 cup mashed strawberries or raspberries -about 1 ½ cups
1/2  cup mashed ripe banana
1/4  cup cooking oil
1 1/2 tsp finely shredded orange peel
1 cup chopped walnuts

In a bowl, combine flour, cinnamon, baking soda, nutmeg, and 1/4 teaspoon salt. In another bowl,
stir together eggs, sugar, mashed berries, banana,oil,and orange peel. Add to flour mixture, stirring
just till combined. Stir in nuts. Pour into a greased 9 x 5 x 3 inch loaf pan. Bake in a 350 degree oven
for 60 to 70 minutes or till a toothpick inserted near the center comes out clean. Cool 10 minutes.
Remove from pan; cool on a rack. Wrap and store overnight.
