TLC Ranch Pastured Pork

Now Available to Eating With The Seasons customers!

TLC Ranch
is a small family farm located in Aromas, CA, which Jim Dunlop and Rebecca Thistlethwaite started in 2004 shortly after they married. Their
pastured pork comes from heritage pigs raised on 48 acres of pasture and woodland, giving them lots of vegetation to forage for, as well as a diet supplemented
with organic grains and organic culled vegetables that they pick up from local farms.  The resulting pork is naturally lower in saturated fat, higher in Omega 3
fats, and has tremendous flavor, juiciness, & aroma. Although the pork is not certified organic, the animals are raised using all organic practices and not given
antibiotics nor hormones.
Because TLC Ranch is a small farm that raises a limited number of animals, the availability and cuts of meat change throughout the year.  Just as you are
learning to eat a seasonal diet of fruits and vegetables that changes, so to will you learn to eat a variety of pork cuts and come to cook and appreciate all of the
animal.  With this in mind, we are offering two ways to buy our meat through Eating With The Seasons.  The
first box is for those who want to make their
own lard and pork stock or reductions.  The
second box will be a seasonal selection of chops, ribs, roasts, ground pork, bacon, and braising or stewing cuts
of pork.  All pork is frozen in vacuum-sealed packages.

Lard & Stockmakers Box (~10 pounds): 5 lbs. of backfat and 5 lbs. of pork bones (+ or - .2 of a pound). Great for making
homemade lard (for pies, tortillas, biscuits, etc.) and pork stock, stews, or reductions. We will include recipes for all these things Here
is a photo below of the backfat and bones in the proportions you would see in this box.

The Versatile Cook Box (~10 pounds): Although this box will vary throughout the year, you will always get 10lbs of pork (+ or - .2 of
a pound). This will always include a variety of cuts such as chops, ribs, roasts, ground pork, bacon, and braising/stewing cuts of
pork. No organ meats will be included. We will include recipes for all the cuts provided. Here is a photo below of what you might see
in the Versatile Cook box.
